In the role of Executive Sous Chef, you will play a key part in creating exceptional dining experiences that uphold the high standards of the InterContinental brand.
Key Responsibilities
- Support the Director of Culinary in overseeing daily kitchen operations across restaurants, banquets, and in-room dining to ensure smooth service.
- Take charge of kitchen operations when the Director of Culinary is not present, maintaining consistent standards and service flow.
- Ensure all dishes are prepared and presented to the highest luxury standards, with consistency, creativity, and attention to detail.
- Supervise food preparation, cooking methods, and presentation to maintain excellent quality at all times.
- Follow all IHG brand guidelines, Forbes requirements, and fine-dining service expectations.
- Enforce strict food safety, hygiene, and sanitation practices in line with HACCP standards.
- Work closely with front-of-house and guest experience teams to provide coordinated and personalized dining service.
- Handle special requests, dietary needs, and VIP dining arrangements with care and accuracy.
- Assist with menu planning, recipe development, tastings, and seasonal updates alongside the Director of Culinary.
- Introduce new ideas while keeping operations efficient and food costs under control.
- Review menus regularly to improve quality, balance, and performance.
- Train and guide culinary team members to maintain high professional standards.
- Create a respectful and disciplined kitchen environment that encourages teamwork and learning.
- Support hiring, onboarding, performance reviews, and team development within the kitchen.
- Assist with ordering, inventory control, and stock management to reduce waste.
- Help with budgeting, forecasting, and food cost monitoring.
- Ensure accurate recipe costing, records, and compliance with internal procedures.
Skill & Experience
- Proven experience as an Executive Sous Chef or Senior Sous Chef in a luxury hotel or fine-dining setting.
- Previous experience in Michelin-starred or Michelin-influenced kitchens is strongly preferred.
- Solid knowledge and practical experience working with Forbes Travel Guide standards.
- Strong understanding of international cuisines, modern cooking methods, and high-end food presentation.
- Demonstrated leadership ability with strong planning and kitchen management skills.
- Culinary qualification or professional certification from a recognized institution is an advantage.
- Experience working in a residence-style hotel or a property with multiple dining outlets is preferred.
- Background in hotel openings or brand changes is considered a plus.
- Genuine passion for cooking with close attention to quality and detail.
- Able to remain calm, focused, and practical during busy service periods.
- Professional, disciplined, and confident in handling team and guest interactions.
- Willing to work flexible schedules, including weekends, public holidays, and special events.
