Job Description

The Head Chef will oversee all kitchen, bakery, and pastry operations, ensuring exceptional quality, consistency, and creativity. Responsible for shaping Princi’s culinary identity in the UAE, the role delivers authentic Italian baked goods, desserts, and menu offerings while leading the team, maintaining high operational standards, and driving innovation in line with the brand’s heritage.

Key Responsibilities

  • Manage daily kitchen operations, including production of artisan breads, focaccias, croissants, and laminated pastries.
  • Create, test, and refine recipes to maintain quality, authenticity, and introduce new offerings.
  • Ensure consistent taste, texture, and presentation across all menu items.
  • Monitor proofing, baking, and cooling processes to achieve optimal results.
  • Develop seasonal and signature desserts, cakes, and tarts.
  • Decorate and present pastries with attention to detail and creativity.
  • Work closely with the culinary team to align pastry items with menu themes and promotions.
  • Maintain accurate food cost calculations and monitor ingredient usage to control waste.
  • Collaborate with procurement and finance to manage budgets and supplier relationships.
  • Analyze sales trends to adjust production plans and reduce overproduction.
  • Implement inventory tracking and portion control systems to support financial goals.
  • Train, supervise, and guide kitchen staff to ensure high standards.
  • Conduct regular quality checks and tastings to maintain consistency.
